In 2009, Nigeria was producing over 45 million tonnes, almost 19% of global production, making Nigeria is the largest producer and grower of Cassava in the world.

According to some statistics – 90% of Nigerian households consume some type of cassava product every day – and we can believe it!

We all eat cassava is various forms – garri, starch, amala, cassava flour, roasted, fufu, and tapioca – everyday without knowing how it’s actually grown and processed.

Cassava in Nigeria agriculture originally came from South America and introduced into sothern Nigeria during the slave trade. In the 19th century salves began to return to Africa and introduced new processing techniques.

Cassava farming in Nigeria is the main staple for foods across Nigeria and West Africa. And in many small villages this type of small scale agriculture and farming is the main means of earning a living.

“Cassava production is the major profession in this village,” explains one your woman. “I had to join them in cassava production just to earn money.”

Throughout the village, men and women farm the plants, peel and process (washing and soaking the cassava for two to three days), grinding, and then the cassava is pressed in clean bags for the water to dry. If you want garri, the cassava is then fried. Young children load the tubers into trucks for sale. It’s not as easy as it looks, as Folly finds out: she manages to peel just one tuber to the other ladies ten.

But every part of the cassava plant is used, whether the peelings are fed to livestock, or the flower used in soups or health and hair products.

“We employe people to peel the cassava for us,” says one young woman. “It must be peeled on time, and we pay 50 Naira per basket.”

“They’re seriously trying,” explains Folly, BattaBox presenter. “This is hard work.”

Firstly, coat the fresh fish in flour and deep fry so it’s in a tasty batter for about five minutes. Our street chef recommends using plenty of oil and a wood fired heat.

Make sure you can hear that delicious, mouth-watering, crackling sound.

Take a big spoon and then ladle the fried fish out of the oil. But be careful the oil is hot. Nigeria food likes plenty of oil, often palm oil. This will then soften the fried fish and bones.

Fried Fish and Garri in Nigeria used to cost between 10-20 Naira, but in the recent recession, costs have gone up to over 100 Naira. But still, most fresh Lagos street food fried fish and garri will be sold out in maybe ten minutes. Plenty of customers will come when they smell the aroma.

“I like to take two pieces of fried fish and garri because I’m a BattaBox big boy who likes his Nigeria food!” says Warri Pikin.

“Things are very hard in this country o,” says one customer who has come for his Nigeria food. “So fried fish and garri is cheap and plentiful.”

Garri is a popular Nigeria food, a staple, made from cassava flakes. To make the Garri, wash it in water or milk, and then mix with sugar.

“In the current Nigerian economy, this is normal Nigeria food!” says the customer.

“Its normally expensive but never this high,”

BattaBox presenters Odunayo and Kayode visited the popular Mushin perishable market in Lagos to talk to traders and customers about how the hike in tomatoes have affected their business.

“A basket used to be N20,000 ($60)but it now costs N45,000 ($120),” complains one of the market women

But what has prompted the scarcity of a vegetable like tomatoes that should be available to Nigerians in abundance?

“Its because some rich people are buying them directly to produce tomato paste,” replies one tomatoes seller

Tomato is one vegetable Nigerians cannot do without. It is used to cook our favorite jollof rice, stew and many other foods we eat everyday. But due to the recent development, people are beginning to look for alternatives to cook like eating gravies instead of stew or coconut rice in place of jollof rice.
